We're starting a game where each player is a different specialist mage. Anyone have good low level adventures or ideas?

I'd start by re-watching some Harry Potter movies.

A quest for knowledge. Have them be explorers looking for achient towers of wizards and sorcerers to pilfer for arcane might.

Also, a cool idea is to keep them in a "shadow" of reality, where they go to arcane schools and such to learn (or teach of they develope a unique spell). I suggest offering the an apprentice feat (two in Complete Arcane, and the one in DMGII) for free. Or granting something akin to an exp. advantage for not taking one of the two (home-schooled offers each experience to be more unique and said characters to glean more from it. Something like an extra 5%, with a small starting bonus). Give them experience for learning new spells, but maybe a slightly reduced amount for combat.

Try watching Willow for some old-school ideas on what magic could be like (casting from a book might offer spell mishap, and take longer, but would give access to higher level spells with say, a spellcraft or knowledge: Arcana check). If you want a gritty game where magic is actually special, stay away from the HP sauce (well, the Goblet of Fire was pretty cool as far as the tourney goes).
