Here's a little challenge I've come up with.

I'm getting set to teach a bunch of noobs how to play so I intend to do so in a homebrew world. (no required reading)

I'm planning on using STRAIGHT CORE rules. No homebrew rules, no splatbooks, nothing.

The only thing that can change from the Players Handbook is flavor. For instance, in my setting, the halfling society is composed of river pirates. They're still rogues, just not typical ones.

How many ideas can you come up with?

It's harder than it sounds.

Interesting idea, and your not the only one with halfling pirates, one of my friends uses that extensively.
Try changing up social structures. Instead of kobolds being clan or tribe based, have their social structure be a fascist empire.

I agree, it's challenging. But one of my favorite tactics used to be changing the appearance of a creature from the MM but keep the stats. Its great fun with dragons; I once had dessert storm born from the hatred of imprisoned souls based on a brass dragon.

Keeping that in mind I've already jotted down the following ideas for the regular character races:
Halflings - a lemur, monkey, or rodent-like race native to forested regions.
Gnomes - an insect race - their advanced senses helps them against illusion, while their pheromone control allows them to affect other races (minor hallucination). They're native to plains or savanna, and I'd make their natural enemies (kobolds and goblins) insectoid and native to the plains as well.
Half-orcs - they're screaming to be remade into a more bestial race; cat, dog, horse, whatever.

Just a couple thoughts. Maybe its not what you're looking for though.
