I'm making a campaign, and of course there are things like deer and elk and other common wild animals. Where can I find stats for them? Is there an internet resource, or possibly a book, where they have stats for common wild animals? Cows, deer, elk, goats, sheep, pigs, etc.?

There are no deer or pigs, and i don't think it has many others, either.

Chickens and pigs only attack in Zelda video games. For instance: Go smack a chicken a half-dozen times and it will attack, knocking your player "out". The novelty of this wears off pretty quickly however, and most players find more interesting things to do. There's always archery contests, foot races, ghost hunting, and of course, that dude Ganon.

That's my attempt at being clever ;). What I mean to say is: There's so much to see and do in a campaign setting. The bees and the birds, flowers and trees are all purdy and nice, but surely not nearly as interesting as the ten foot tall hill giant that just stepped on your house. "Man, that stinks! Hey, YOU stink! Scared off my goats, dang-it!"

If you ever need to know any of the numbers of a chicken, take a raven. It's a bird of about the same size. There are no stats for pigs, because no one ever fights with them.
