I think that to fit the concept I have in mind I'm going to do something along the lines of Fighter 20/Dwarven Defender 10/Deepwarden 5/Dwarf Paragon 5 (modified here: http://boards1.wizards.com/showthread.php?t=251402). Stats will be 18 STR, 8 DEX^, 20 CON, 14 INT, 10 WIS, 6 CHA (30 pt). Mostly specializing in charging in and wrecking havoc. This will make a total AC/HP juggernaut weilding a big *** weapon. Decked out in lots of armor, Dwarven Warpike*, Goliath Greathammer*, back-up Dwarven Waraxe, & some throwing axes. Feats will be mostly centered around PA/Charge stuff, with some going to Throwning weapon improvements.

A lot of people have suggested going for Combat Refx and Imp. Trip. Combat Refx won't help me if I have 8 DEX - so is tripping still a viable option?

As far as Cleric goes, it doesn't really fit the concept I have of a specialized 2H fighter tank. I guess I could RP it as blessed by the gods 'cause I'm so great, but eh.

All comments welcome, I am a n3wb and am trying to learn this all meself. I'm basically looking to set up a Dwarf fighter with 2H weapons. I prefer Fighter > Barb. because of armor and I don't much like rage. Not very interested in mounted combat, ranged combat, sneak attacks, turning into a walrus, etc.

^ I know this has a conflict with Dodge pre-reqs (and therefore DD prereqs).
* 2x6 x3, reach, trip, set vs charge - Races of Stone
** 1d12 x4 - Races of Stone

*EDIT*
Oh ya, my group is probably going to Gestalt to make awesome Healer Mages, so should I pick up something else on top of what I already have set up? It sounds pretty beefy already, and I'm also not sure how much I can RP in another class on top of what I already have.

You're 40th level and your highest ability score is a 20. I cant say that's unusal since I've never seen a 40th level character before (And I've been at it over 20 years), but my lowly 12th level fighter has a 21 in his constitution. Maybe all the adventuring one has to do to achieve 40th level has taken a toll on this dude. He's either lost his abilities to draining effects, or he's so old that his physical stats are wasting away.
You say you are new. I would suggest that, being new, you don't jump right into playing a 40th level character. Play a few low level guys, work them through their mid and upper levels and that way you gradually learn the game and the system. After a few such campaigns you'll know as well or better than us what is best for your 40th level characters.

???

Well, for one thing I just listed base stats. CON and STR each get a +2 from Paragon, and I'll probably dump my points from leveling into STR.

Oh....I made a mistake. I forgot that multiclassing doesn't let you level in more than one class at a time, favored classes just get rid of the XP penalty. Ok, well I answered one of my own questions. I do have to Gestalt to pull this off.

Anyways, the thing I was really wondering about was general comments and specifically about tripping with only one AoO.
