what's the best way to build a pugilist using only official WoTC books?

Fighter -> Monk -> Shou Disciple -> Kensai and/or Drunken Master

There is no single "best pugilist build" but a few builds can be really scary with properly chosen feats:

Goliath Fighter4/monk4/Sword Sage11 focusing on Setting Sun, Shadow Hand and a few well chosen Iron heart techniques. This guy makes Jet Li look like a pansy

Human Monk 4/Fighter4/Shou disciple5/Kensai7. You hit things and they fall down, period...

Dwarf fighter2/Warblade18: Kill anything with you bare hands...

That entirely depends on what you mean by best... I personally like the pugilist that is monk -> fighter OR monk -> rogue.

Most people may not agree, but I found that Stunning Fist and Sneak Attack work very well together. Throw in the Ascetic Rogue feat from Complete Adventurer, and you have levels stacking for Monk unarmed damage...

Goliath is a race from Races of Stone. I'm not quite sure where Shou Discipline is from, I think a Dragon Magazine.

if you're trying to make a "boxer," monk levels don't seem to make any sense to me. i mean, there are disciplined, lawful boxers, just like disciplined, lawful monks. but what about boxers that end up fighting more like barbarians do? you know...chaotically.

Honestly, if you are looking to be an unarmed fighter as a fighter or barbarian, you'll need Superior unarmed strike from Tome of battle,

It requires unarmed strike, and basically it gives you a scaling boost to unarmed damage to that of a small sized monk up to the 16th level.

I've been playing a barbarian/fighter that has this, It is amazingly fun being able to take things out with nothing more than your fists and not have all the "wu shu" going along with it; being nothing more than a bar room brawler is neato!

i'm thinking i just want to take some of the monk stuff and some of the barbarian stuff and make a homemade pugilist. no "wu shu," just like you said, but also no small monk damage. i want a heavy hitter.

Unarmored Pugilist:

hit dice: d12
Base attack progression: best
saves: fort good, reflex poor, wil poor
skills: same as Unearthed Arcana's fighter variant - thug
(4 skill points per level / use fighter skill list plus Bluff, Gather Information, Knowledge (local), and Sleight of Hand.)
weapon proficiency: same as rogue
armor proficiency: none
unarmed damage progression: as monk
damage reduction: as barbarian
unarmored dodge bonuses at 1,5,10, 15, 20

does this seem weak, powerful, or balanced?
