Let's see, depends on the style you want:

"classic"
weapon: heavy mace or light flail
armor: Plate
shield: Large steel
domains: Healing and Strength
race: Human or dwarf

This gives you a so-so tank, with good aC and alot of beneficial spells, but not much in the way of boomey spells.

"combat"
weapon: Favored of diety
armor: mithril chain mail
shield: large steel (or none with a 2 handed weapon)
domains: War and I like strength or destruction
race: Dward. Although humans and half-orcs work good too.

"tricky"
weapon: dagger and/or short sword
armor: Lightest possible
shield: lightest possible, or none.
domains: Trickery and either luck or magic.
race: I like halfings for this one.

"hippy"
Weapon: none
Armor: none
Shield: none
Domains: Healing and Protection
Race: Elf or human.
Note: take Vow of Poverty, nonviolence and peace.

All shields save bucklers do, yes.

*shrugs*Most DMs I've met havnb't thought about that though ;)

That's exactly why my cleric uses a greatsword. Either one-handed casting or two- handed smacking. Although in the past, I had a cleric with a mace on a thong who would let go of the mace, cast and swing it back into his hands as a move-equivalent. But most DMs I've seen don't know or care about that ruling.
