Between these which is better?
Druid (5)/MoMF(10)/War Shaper(5)
you only hav 5 levels of spellcasting but full a ton of full progression wildshape
Wizard(7)/Master Transmogrofist(10)/Chameleon(3)
You lose out on 7 levels of casting but if you are goinging epic you get shapechange, and chameleon lets you make super use of the bonus feat they get.
which one would you choose?
I like the changing into Abberration's mainly to throw people off, but also for the Su qualities...

I'd take wizard 20 and cast shapechange. And still have 9th level spells.

First off, without the right feats, you don't get the Supernatural abilities of the forms you assume, the buck stops at Extraordinary. With the right feats a straight Druid is quite potent, and is potent without them as well. Dragon Wildshape (Draconomicon) and Aberrant Blood>Aberrant Wildshape (Lords of Madness) open up a plethora of abilities for the Wildshape-focused druid (be sure and take natural spell also). With the above feats the Druid/MoMF is also scary, since he can now assume the shape of a Great Wyrm with all the trimmings, if you do go that route mix your last levels between Warshaper and Nature's Warrior.

The MasTran is frightening even without the supernatural abilities of his favored forms once he gets on the mix n match train.

Either way there is no real definitive answer, it's really a matter of preference and what your DM will let you get away with.

DRAGON WILD SHAPE [WILD][EPIC]
Prerequisites: Wis 30, Knowledge (nature) 30 ranks, wild shape 6/day.
Benefit: The character may use wild shape to change into a dragon (black, blue, green, red, white, brass, bronze, copper, gold, or silver). The size limitation is the same as the character’s limitation on animal size. The character gains all extraordinary and supernatural abilities of the dragon whose form he or she takes.

Dragon wild shape only lets you take on small and medium dragon forms (specifically), so limits you to much yunger age categories in general. The epic dragon wild shape feat listed above is the only way I know to get all dragon SU abilities and still allow the statndard wildshape size range (MoMF 10 does it but without Su abilities). Even with Shapechange, master of Many forms 10, or the full epic Dragon Wild Shape the smallest of great wyrms have 36 HD and would take high epic caster level or effective druid levels to assume with all of the trimmings.

Personally I prefer the warshaper option for infinite uses per day and all of the other goodies. I'd recomend D5, MoMF7, WS5, and Nature's Warrior 3. That gives you 2 nature's armament tricks (many strong options in there like +3 to damage for all attacks, +3 natural armor, +1 enhancement natural attacks, +4 grapple and constrict bonuses, etc.) But if you've got your heart set on elemental and large dragon shapes then stick with what you've got.

Transmog has serious power in a few favoured forms and MUCH stronger spells but is still much more limited as far as how many times per day it can be used (and can't necessarily speak in thier alternate forms which may force them to expend more precious spells just to talk between battles).

Just a quick question on the side: from which book is the nature's warrior?

Complete Warrior, same source as the Warshaper.

Right, so he'd be a Gargantuan Dragon with the Su abilities of a Medium one, sorry if I wasn't clear on my statement (though some could argue for the opposite, perhaps we should write the Sage). Also please disregard my comment on Abberant Wildshape as that would only garner you the Ex attacks (as normal wildshape), which obviously you'd only need MoMF to do.

Also look at the Assume Supernatural Ability feat from Savage Species, takes a concentration check but you can manifest one Su feature of your assumed form.

I don’t know if they stack like that. He would have to wildshape into a med dragon to get a supernatural abilities. If he wildsahped into a large or larger dragon, he would get no supernatural abilities.

I think druid 20 is the best option. They get good wildshape abilities. Not as good with master of many forms, but they get shape change. They get a nice animal companion. Immunity to poison, they never get age penalty’s, they get spell like abilities of elementals.
