...never attack a defenseless foe, never attack an unarmed opponenet...

AKA fail to work with your spellcasting allies and to die like a gnat when attacked by LE sorcerer/monks.

...never resort to torture, defend the down trodden equally without prejudice toward social standing.

AKA be lawful good.

Here's the code I use for my paladins: (from Unearthed Arcana)
Never commit an evil act.
Respect legitimate authority.
Act with honor (don't lie, don't cheat, don't use poison).
Help those who need help (unless they abuse that help for evil or chaotic ends).
Punish those that harm or threaten innocents.

Under three seperate DM's I've never gone wrong with it.

I've never seen the need for an elaborately detailed code. Batman never wrote his down. Neither did Spider-Man, Captain America, Zhao Yun, Samwise Gamgee, or King Elessar. You're a fearless hero, not a corporate copyright lawyer. You know the difference between right and wrong, and never do wrong.

I once tried to make a Code for a character too. Eventually it became a splendid list...that I never used.

setting up a CoC might help you getting the feel of a Paladin, but don't actually 'use' it .......it usually just makes roleplaying a lot harder.

Thiers a section in Unearth Arcana that may help. It has various codes from other classes, that you may want to incorporate into your own pally. Heh if you really want a strick code, you may want to take a look at the code of bushido.
