Basically, my question is: What happens in-game when someone takes ability damage (through poison, psionic combat, etc) to the mental stats (Int, Wis, Cha)? How should that be played?

Well, once written in the "temporary score" section - apply "temporarily" to all of the abilities and skills tied to it thereof. There's no really woozy effect (unless specified in the spell description), so....just stuff that you DO is effected. Like future saves based on that score.

But ya, I think you do grow instantaneously more idiodic once you lose 5 intelligence points.

The really funny one was when my cleric went barrelling head first through a poison trap, stumbled to the other side, and was dropped to 2 strength. (3 or four failed saves...)

The poor girl just kinda slumped down against the wall and couldn't even move. She needed someone else's help just to take off her armor so she could crawl around.
