Trying to convert an old favorite from 2nd edition.

I have this character I enjoyed immensely in 2nd edition that I would like to convert to 3.0/3.5.

Essentially, he was the third son of a major noble (I chose the house of lancaster) who was cursed to be a Minotaur.

His response was very...british. He basically took a stiff upper lip and sought his fortune as a knight-errent.

For a minotaur, he was surprisingly charming and polite (LG alignment), and he was obsessed with his family's honor.

In 2nd edition, I used the following books to create him
1. Players handbook
2. Complete Book of fighters
3. Complete book of humanoids
4. Combat and Tactics

I had (at 1st level) Taken a minotaur fighter, had him take the myrimodom kit, and gave him proficency in bastard sword (sp), shield and heavy crossbow (he used a archer's glove rather then a cranquim to load bow, as he was strong enough to pull back the wire on its own). He wore a suit of chain, that had a tabard with his family's crest (a gryphon rampart).

Obviously this is not going to be an easy character to convert over

I kinda want several versions for both greyhawk and FR to convince the gm when I wish to play this character.

So far the closest thing to what I want is the Krynnian minotaur. Basically an ecl 0 monster race.

I am trying to pick similar weapons (although not identical), and develop a descent build for an infantry knight.

I am open to any and all suggestions to make this character converted over.

Also could you make a list of books needed for your suggestions (if beyond the big 3)?
