I want to play a Half-Minotuar Human, in Eberron, who is going to have a few psychic warrior levels, and human paragon levels(from Unearthed Arcana). And his weapon of choice is the harpoon.

Trying to think of a way I can tie all these things together. Maybe he's ashamed of his Minotuar roots thus trying to be more human and taking the human paragon levels?

I assume that your DM has green-lighted your taking the Human Paragon class? Normally half-races can't take the paragon class of one of their ancestors unless their specific paragon class (which, for a half-minotaur, doesn't exist, AFAIK) has the divided ancestry ability (like Half-Elf Paragon and Half-Orc Paragon).

Also, try to convince your DM to let the increases in spell casting to your PsyWarrior abilities. Technically, a Psywarrior is a manifesting class to the Human Paragons bonus spells per level do not apply, but some DMs are not so **** as to make a distinction (a few others however take the notion of "Spells per day" literally and rule that spells ≠ manifesting, especially if they hate psionics).

In any event, I think the notion of loathing your animalistic half makes sense. That would explain why you developed your psychic talents as well as the human paragon levels.

I've seen somewhere that half-giants are not really an half-race, they are more like giants who were psionically attacked during their childhood, making them physically degenerated but giving them psychic power. Your half-minotaur could be something alike. He could be living near a lake and using his harpoon to fish salmon and pike.
As for the human paragon levels, you could discuss with your DM to twist it a bit (adding psionic progression) and call it "Half-Minotaur Paragon".

A couple things I would consider is
1) How pronounced are his Minotaur roots. Can he pass himself off as a big and ugly human, or is it obvious.

2) How was he conceived/ born/ raised?

Fiddling around here's what I thought of.

Mauli was born in an Illithid compound. The product of a breeding program, the Illithid's were quite pleased with the result. His natural psionic talent made him easy to contact and order around, and he proved a strong dextrous worker. His strength and dexterity made him an ideal choice at collecting fish and warding off Aboleth's from the nearby river.

Like countless Illithid Thralls, Mauli recieved his freedom in the form of a Githyanki Raid on his master's. A sucessful strike wiped out the compound of Illithid's. Adrift and opening his eyes to an individuality never before present, he ventured from the caves. He wandered through the underdark for awhile with a band of fellow exthralls. He learned that not all had been born into captivity as he had, but spoke of their life with pride. He assimilated their comments and prides as their own, learning as if a child. As the group fragmented Mauli remained with a middleaged human. A bard, having been captured by the Illithids in his travels, he told Mauli of the great heroes of his land....

But other routes might be...
-A member recruited for his talents by the church of Zarus (RoD, believes that humans are the best race, and all the other humanoids are imperfect imitations) Worships his humanity and believes he is permanently soiled by his brutish nature.
-A human paragon's main skill is the ability to adapt- Perhaps he seeks to prove himself cleverer then some presume him to be and able to when by a variety of means, not just strength (playing to the Swashbuckler Stereotype)
-Perhaps he was found as a child and raised by fisherman. He never knew any others than humans and grew under their rugged example (in the mould of Old Man and the Sea)

Anyway, I hope you found something you liked, Goodluck, and Have fun!
