I really like all the flavor behind the Ruby Knight Vindicator class, but I'm having trouble coming up with a reason for why a character would be devoted to Wee Jas....so I was wondering what people thought might be good possibilities.

The traditional ones:

-Her grandparents were Wee Jas followers, her parents were Wee Jas followers, and by Wee Jas, so is she! That's what she grew up with, and she went to the temples from age four, and she's never really seen any reason to change.

-She was a kind of wild and crazy type, or maybe she had substance abuse problems. Maybe her parents sent her, or maybe she turned herself in after waking up with a really horrible hangover. She needed discipline, and the church of Wee Jas is very disciplined. She lived as a nun for a while; it worked, and now she credits Wee Jas with saving her life.

-She wanted to be a wizard, originally. She started worshipping Wee Jas, praying for success in magic. Her mentor, though, found she just wasn't quite smart enough to be a very good wizard, but thought she was quite perceptive, and might make a good cleric, and recommended that she look into that route to wielding magical power. After meeting with her priest, she eventually decided to become a cleric.

-She's fascinated by death. She fears her own mortality, and prays to Wee Jas for courage, and for a good death that isn't to protracted or painful, and for a good afterlife.

As above. Usually one is devoted to a certain religion either because of tradition, in the family or society, or because they strongly identify with this religion. If your character's views coincide with Wee Jas' dogma, s/he can make a fine enforcer for the faith.

A possible twist - there was a raid on the temple, or he/she just died of natural causes. She was a cleric/temple guard/both before, and because of his/her services, Wee Jas decided to provide a ressurection... or rather, a reanimation. Your character is now undead (maybe even a Death Knight) and more devoted than ever. having your goddess personally zombify you can do that.
