According to the description of this PrC, can anyone see in the 'enchant weapon' ability why this character couldn't have more than one enchanted weapon at the same time, given the fact that he would need to spend seven days attuning himself to it?

I know it says he may imbue "a specific weapon," but to me that may be a bit ambiguous...I could argue that the description applies simply to the prerequisite weapons for the PrC itself and that, for example, he may have two +1 short swords at first level.

This is a rules question and there is a board for that. Maybe they have an opinion on the matter?

I believe it's in the DMG, IIRC.

If that melee weapon is lost, she can choose another...

that 1. b. used to refer to the one, thing, or type specified as follows: The relics found were those of an earlier time.

Now, I would interpret the wording as the thing specfied. Namely, that weapon is specified.

You're considering that it might be the type specified. Namely, that weapon is of a specific type.

However, later, the repeated use of "it" (singular) with no provision for plural ("they") would cause me to infer that the Arcane Duelist was not made with the intent of two weapon fighting. However, the wording in no way precludes the use of a double weapon, in my opinion, since the DMG always fails to outright state: "Each head of a double weapon counts as two separate weapons for all magical abilities."
