Anyone know of any monsters or beings offhand that are immune to brilliant energy?

Undead and Constructs cannot be hurt by brilliant energy weapons.

Undead and Constructs cannot be hurt by brilliant energy weapons.
This also seems to include living constructs as Warforged :)

The matter of hurting living constructs with brilliant energy weapons seems like something that would be left up to the DM. Personally, I would say that they can be hit, since BE ignores all nonliving matter. Since warforged have a constitution score, they are considered alive, and therefore should be vulnerable to a brilliant energy attack.

This argument came up when Eberron was new. I think most people liked the idea that since warforged gain half benefit from healing spells that they would take half damage from Brilliant Energy. I don't remember the reasoning behind it.
