After Arcane Archer 2, it starts to suck even more than the first two levels. I would stop there and get a level of Eldritch Knight. This way, you'll get a bonus feat as though you were a Fighter - pick up Mounted Archery. Continuing with that class will let you advance Sorcerer spellcasting, so you can imbue your arrows with some better spells.

Your companion should be something really fast.

Well, here's some resources to check out. If you can pin down exactly what books you have access to, it would help.

The 3.5 Ranger Thread (http://boards1.wizards.com/showthread.php?s=&threadid=57494)
Psychic Warriors can make pretty good archers, too. (http://boards1.wizards.com/showthread.php?t=53738)
Funny Slaughter's discussion of the Ranger, and a "good" build. (http://boards1.wizards.com/showpost.php?p=2947193)
KSB Snow Owl's archer builds (http://boards1.wizards.com/showthread.php?t=183604)

For a character that really focuses on mounted archery, check out the Shaaryan Hunter from the Player's Guide to Faerun. It's basically a mounted ranger, it might be just right for you if you want to ride around, shoot things from horseback, track while mounted, and so on. It's not a super-strong PrC, but it's not bad, either.

If you want to have a flying mount, that can be accomplished. Also, check out the Supermount (http://boards1.wizards.com/showthread.php?t=382372&page=1) if you want your mount to outshine you.
