Does using adaptive style during combat provoke an AoO?

I would rule No, but I have no rules citation on that, I just think it would be more fair.

They lose a whole round of actions anyway, I don't think they should get AoO as well.

Well, consider similar actions from the SRD that do and don't provoke attacks of opportunity:

Activate a magic item: no
Cast a spell: yes
Concentrate to maintain an active spell: no
Lower spell resistance: no
Use extraordinary ability: no
Use skill that takes 1 action: Usually
Use spell-like ability: yes
Use supernatural ability: no

Based on this set of actions, I'd say no. Meditating for a full round in order to alter your readied maneuvers is probably the most like concentrating on a spell. In addition, all maneuvers are specifically stated to be extraordinary abilities unless they're supernatural abilities - neither of which provoke.
