I am simply reading the online download modules to get a feel for how they are made now-a-days.

I see that many, using "A Dark And Stormy Night" as example, often have a cryptic key near some of the room descriptions, for example:

3. Rat Race (EL 2)
or
7. Getting Ahead (EL 1)

I've seen others as well, what do the keys (xx #) refer to?

EL = Encounter Level. Monsters (and traps) have a CR - combining the different CRs for all the monsters involved in an encounter according to the rules laid out in the DMG gives you the EL for that encounter, to determine if it's appropriate for a specific party level or not.

Thank you, and forgive me as I have more. I *know* that when I have the books in hand it will detail this, but for the moment I do not, so bear with me.

I'm pretty sure I can ignore some of it for a basic adventure, but I'm curious none the less.

Example monster information from module:

Hobgoblin Raiders (2):
Male hobgoblin warrior 1;
CR 1/2;
Medium humanoid (goblinoid);
HD 1d8+2; hp 6, 7;
Init +1;
Spd 30 ft.;
AC 15, touch 11, flatfooted 14;
Base Atk +1;
Grp +2;
Atk or Full Atk +2 melee (1d6+1/19–20, short sword) or +2 ranged (1d6+1, javelin);
SQ darkvision 60 ft.;
AL CE;
SV Fort +4, Ref +1, Will –1;
Str 13, Dex 13, Con 14, Int 10, Wis 9, Cha 8. Skills and Feats:
Hide +1, Listen +2, Move Silently +3, Spot +2;
Alertness.

Only a few items arn't openly clear to me, so I've put them in bold. Anyone assist?

AC 15, touch 11, flatfooted 14;
Flat footed AC is how hard they are to hit if they aren't aware of you (eg. vs a character from hiding)
Touch is how hard they are to hit with a touch, or ranged touch attack (eg. ray of enfeeblement


Grp +2;

The bonus to a grapple check


Atk or Full Atk +2 melee (1d6+1/19–20, short sword) or +2 ranged


Full attack is what attacks they do if they do a full attack, rather than a partial attack. In this case, there's no difference, but at higher level, monsters get more attacks

Perhaps a look at the srd (http://www.wizards.com/default.asp?x=d20/article/srd35) will help you out a little as well. If you haven't purchased the books yet, this is an invaluable little tool.
