The book says that thiefs have a sign lang but does not really gives you an idea of what it looks like.

Any one know a site that shows some?
Oh and maybe one with stuff on the master Langs too.

Try Google. I kinda doubt you'll find anything, though. With the notable exceptions of Tolkein and Klingon, not many people bother making up complete languages for fictional worlds. At best, you might find a few example signs. If that's all you want, you may be able to find it. I don't think you'll find any official WoTC/TSR information, though - just stuff made by players.
I have no idea what you mean by "master languages," but again, Google's your best bet.

Wait, what book are you looking at, anyway? There's no thieves' cant in 3.0/3.5.

In my opinion (and this is based mostly on 2nd ed so you'll have to cut me some slack) I always thought of the hand signals used by special forces in the current day military. In 2nd ed you could only comuniate simple words or phrases which is pretty much exactly what they can do. Indicating objective, number, direction, time, etc. If that't the way you want to play it you should definately be able to Google it up.

Don't know about sign language, but hobos in the early 20th centure had a code of simple graffitti symbols they would scratch into posts or other places. These symbols gave info about where you could sleep, what places were good to rob for food or money, etc. A gallery of some of these can be found here:
