Classically Demogorgon has been described as having baboon heads. That is the way he is described in the Hordes of the Abyss, and shown on his miniature.
Does anyone know why he is described as having hyena heads in the Book of Vile Darkness?

it might be both? he is a deamon, a paragon of chaotic evil.

After I posted this I found a reference in a thread on Monte Cook's website where he says that he made a "terrible error" and that the baboon/mandrill heads are correct.

Darn. I aways prefers the hyena heads to the baboon. Yes, the baboon may have all its points, but the hyena heads, combined with the BOVD pic, aways sounded and looked more bad-ass...To me at least.
