A fwew years ago one of my players bought the EBS and I looked through it and I liked various bits of it. Not perfect but now I've reread it I liked it more and more.

Normally we play FR or Darksun or homebrew. I took the plunge and today I bought the ECS. Even if I never run a Eberron game I can at least mine it. You would be surprised at how much I've mined out of the FRCS for example. What Ebrron nooks are rubbish and decent? I'm a big fan of FR but I don't like the recent additions to that product line so here I am, pls be kind. My normal D&D group has been on hold for the last 2-3 months due to a variety of reasons and we've dabbled in other systems.

I've also got the Psionics Handbook if it matters.

Welcome to Eberron! :)

Can you tell us what you do and don't like about the ECS book? That will help me at least understand what you want from the world and what books would be of greatest benefit to you.
Here's some initial thoughts:
If you like the 'noir' aspects of the setting and like the idea of city adventures, then Sharn: The City of Towers is worth considering.
If you intend to concentrate on the heart of Khorvaire for your adventures then The Five Nations gives you a good background to Aundair, Breland, Karnnath, Cyre/Mournland, Thrane.
If exotic adventuring is your bag then Secrets of Xen'drik and The Explorers handbook are worth a look.
For politics or if you like the idea of dragonmarks generally then The Dragonmarked would be useful.
Secrets of Sarlona is useful if you want to know about that continent (duh!) or like the idea of the Dreaming Dark - the psionic handbook is useful obviously.
Magic and Faiths of Eberron are good supplements no matter where you are running your game.
Players Guide to Eberron is a mixed bag of delights. I like it a lot; it's adds a lot of fluff to the world, supplementing the info in ECS. (Just don't mention the sidebars though! ;) )

I haven't finished reading the book and theres not really alot I dislike. Not sure where to set it but we we leaning towards a sea based game- pirates.

Hmm. Well the obvious location is the Lazaar (sp?) Principalities. AFAIK that's covered in ECS and I think there's a 2-pager in the players guide.

I think you'll also find some information about in the Eyes of the Lich Queen adventure (I've only flicked, not read cover to cover though).

While Eyes does have two chapters that happen in the principalities its not what I'd call a primary source on it.

While no accessory has expounded on the Principalities much yet I can suggest looking at The Dragonshards (http://www.wizards.com/default.asp?x=dnd/archeb/ds)

These are articles written by Keith Baker, creator of the setting, going into greater detail on whatever happens to be on his mind at the time. There is a two part Dragonshard on the Principalities.
