Depends on the size. It'll have a dex of 0, with the whole "not being alive" thing, so a -5 there. So an AC of 5 if medium or 6 if small. It'd probably be small. The fact that it's moving wouldn't mean much, especially if it's moving in a relatively straight path. If it's going all about as it rolls, then maybe give it a circumstance bonus.

you automatically hit any unattended inanimate object. It's not trying to evade or block, so you're not going to miss it.

I'm fairly sure "rolling" and "inanimate" are not wholly compatible though.

This would normally be right, but, personally, I would houserule that if it were rolling that would be harder to hit. The difficulty would depend on how fast it is rolling -how many feet it can move per round.

To keep things simple, I'd say that a barrel rolling 30ft per round would be treated as having average DEX (10,) so the ac of a small barrel would be 11. For every 10ft faster that the barrel is moving, it would get a +1; for every 10ft slower that the barrel is moving, it would get a -1. I know that's not supported by the rules as written, but it's quick, easy, and it somewhat makes sense. Keep in mind though that -depending on terrain- the barrel may not continue to roll.

So, small moving barrel AC:

Normally inanimate - AC 6

Moving - +2 circumstance bonus - AC 8

Moving 10ft per round - AC 9 (5 + 1size + 2 circumstance +1)

Moving 20ft per round - AC 10

Moving 30ft per round - AC 11

Also, I would say that the barrel has no initiative, so it would either move at the end of the initiative order or move on the turn of the person who set it in motion. That depends upon what makes more sense to you.

On a side note: Most DMs would probably rule that the barrel simply recieves a +2 circumstance bonus; AC 8 for a small barrel.
