Are there any official guides/rulings on what kinds of magic items an animal can wear?
I.E. - Are rings wearable, how about a cloak, boots, gloves, bracers, etc.

I don't think that there are established rules except common sense. Animal could wear necklaces, bracers, non-foot-covering boots(leg bracers), bracelets, barding(horses can, why not a wolf?), and maybe rings on a necklace or attached to bracers. I think that rings would be hard to do because animals have biggish knuckles on short(usually) fingers/toes. If you're a chimpanzee, treat yourself as a human in regard for slots.

Savage Species mentions using ears for rings.

Thanks, guys. So, if I wildshape into a bear, what magic items won't remain worn - i.e., what magic items will meld into the new form, and which will remain functional.

ANy object you are wearing and that the new form is able to wear on the same general vicinity are still worn on the same areas.
