I've spent the last few days pouring over my books looking for an Item I know I've seen before. It's called the Animator's Ring, costs (I think) 500 gold and allows you to control more undead at one time. Anyone know which book this may be in?

I can tell you unequivocally that such an item does not exist in 3.5, because I'm an undead-specialist player, and would assuredly have bought this ring multiple times by now if it did.

There is the deadwalkers ring, which desecrates any undead you create, but it does not allow more undead, and is in complete mage. I think you may be refering to adnd, or a *very* obscure 3rd party book.

The Rod of Undead Mastery doubles the number of HD of undead you can control at any given point (so if you normally can control 20 HD worth of undead, you can control 40 HD worth of undead with the Rod). It is found in Libris Mortis and to any necromancer, it is well worth its price.

You mentioned Third Party - got me thinking and I found it.

Hollowfaust; City of Necromancers has a very small 3 page list of magic items. Among them: The Animator's Band.

However, the item is far from what I remembered. It costs 50,000, not 500, and it doesn't allow you to control more undead, it raises your caster level by 3 when castng animate dead. not really worth it IMHO.

So go with the item I mentioned. It does do what you're asking.
