Only if they have some sort of weapon to attack with. Without their primary weapon, their options are somewhat limited, but if they have the Improved Unarmed Strike feat, they can attack as normal with unarmed weapons. In addition, you threaten with natural weapons, as well as armor spikes, and even, I believe, your shield, although using it will give you major penalties without the proper feats. A trip attack could only be attempted if you threaten in some way, however. This is because your opponent does not actually provoke an attack of opportunity if you don't threaten them. Movement provokes an attack of opportunity for leaving threatened squares. If you do not threaten in any way, there is no attack of opportunity. I believe, though, that if you did in some way threaten (such as with an armor spike, or gauntlet) but did not have improved unarmed strike, you could make a trip attack as an attack of opportunity. This would provoke an attack of opportunity as normal, however.
