For example, wounding does 1 point of Con damage, does it do that every time it hits something, or just the first time?

This is actually a sticky question if asked by itself.

Ability Damage, such as the Wounding property in your example or most poisons, does indeed stack.

Penalties to your ability scores, such as from Ray of Enfeeblement, do not stack. 600 wizards all cast RoE at you and you take the penalty from whichever one of them rolled the best.
