One of my Halfling players has a Wardog.
When not mounted, how does this dog behave in combat.

Does it attack/defend itself and /or master without being given commands to do so?

Or does it always require some sort of command to do anything?

Is there concrete rules for this in the PHB?

I would guess it depends on how the character treated the dog. Most dogs will defend their owners to the death.

By the book they follow orders till you give them another this simplifiys play not having give it the same commands every few minutes.

What would a RL guard dog do? He would probably defend his owner fiercely, but might be scared off by very unusual or bad-smelling monsters. If his master wasn't being directly threatened, he's probably bark angrily at anything that seemed unusual or threatening, but not likely attack unless ordered to.
