If you put a sandwich in a bag of holding, would it go bad? People eventually suffocate, but what would happen to bacteria and mold spores?
(Weird question, I know, but I'm serious)

there -is- a volume of air inside, and its not nessicarily refriderated.

it would go bad just like leaving it out in a breezeless shadowy area.

I suppose that leaves an interesting magic item option open, then... Refridgerated Bag of Holding.

Yeah, but when you close the refrigerated bag of holding, does the light inside turn off?

Not if the sandwich is The Weakest Character Ever, by which I mean a powerful telepath who has pulled some quirkiness with (True) Mind Switch.
