A Bane weapon increases the enhancement bonus against a designated foe by +2. Would this increase override the normal enhancement limit of +5? For example, would a +4 Undead-Bane Longsword function as a +6 Longsword or a +5 Longsword?

It would act as a +6, but it technically doesn't break the limit, because in most cases the weapon is still just +4 enhancement.

The +5 limit is a limit on enchanting, not a limit on what it can do.

So is the +10 limit.

You could for example cast Greate Magic Weapon, making it +5 on the following:

+1 Vorpal, Holy, Axiomatic long sword (+10 enchantments)
