The Main items used are: Bracers of Armour (Armour bonus to AC). Maximum printed bonus goes to +8 non-epic. Amulet of Natural Armour (natural armour bonus to AC). Maximum printed bonus goes to +5 pre-epic. Ring of Protection (Deflection bonus to AC). Maximum printed bonus goes to +5 pre-epic. The Amulet and ring stack with each other and with all armour and shield bonuses, however the Bracers of Armour don't stack with any other armour bonus(such as that provided by a suit of armour, either mundane or enchanted). These are the "Big Three" for improving AC. There's also the Ring of Force Shield(+2 sheild bonus to ac when active, does not stack with other shield bonuses). Monk's Belt(Gives Wisdom bonus +1 to AC when unarmoured and unencumbered, will stack with the Big Three), Dusty Rose Prism Ioun stone gives a +1 Insight bonus to AC(which stacks with the Big Three), Gloves of Dexterity(while not giving AC themselves, they increase Dex which improves AC in most cases unless encumbered)... There are probably more diverse items in the extraneous books, but those are the key core items for AC.
