The buckler description only describes the effect of two weapon fighting with a buckler, no mention of how it affects fighting with a two-handed weapon. Can it be done? If so, how would it work? Would there be any merit to it?

Considering the rules, I'd say you took the -1 and still lose the AC bonus of the shield unless you took the Improved Buckler Defense feat. Even then, you'd still have the -1 (due to the extra weight on the blade from your left/right hand with the buckler)

Ryu is correct.
You are still weilding a weapon in the hand with the buckler, it just happens to be the same weapon that you are weilding in the other hand also.
You will have to decide if it is worth it to you. We can't answer that. You will be -1 to attacks in exchange for a shield bonus to AC, assuming that you take the improved buckler defense feat. If you can't spare the feats, then no. If you can, the buckler should provide an AC improvement to you in excess of the attack penalty that you take (which, in effect, gives the opponent an AC improvement), so I would be more inclined to say that it was.
Armor isn't everything, though, so don't hate me when you miss an attack by 1 and get fried by a dragon's breath weapon if you would have killed it with a hit.

You can use a Two Handed Weapon with a buckler at -1 penalty.
You lose the AC unless Improved Buckler Defense.
You still take the -1 penalty with Mithril Buckler with 0 ACP.

Animated shield, baby!
(Once you can afford it, that is)

+3 buckler = +4 to AC and -1 to attack IF you take an additional feat.
+1 animated heavy shield = +3 to AC but no attack penalty and no feat.

Plus they're cool. If you haven't played a druid in dire bear form with a dragonhide shield floating around her then you haven't lived. :D
