I know that it can be used for the initial touch attack, but that's not what I'm aiming for.

Say a pack of wolves is chasing down a character on a horse (each wolf has a +1 trip mod, while a heavy horse has a +10 mod to defend); can multiple wolves try to Aid one wolf in its opposed trip check?

The Aid Another description only mentions attack rolls, skill checks, and a few specific spells.

Technically? No. Just Attack Rolls, AC, and Skill Checks (with some unclear reference to spells). However, I can definitely imagine some situations where other uses of the Aid Another action would be acceptable. The example you gave is not valid for one main reason:

Wolves aren't smart. Sure, they've cunning, but in the case of unmodified animals, I would steer clear of anything resembling advanced tactics. Not only that, but how, pray tell, would a wolf aid another wolf on a trip?

All the wolves trying to trip the horse each round also has the same effect, greatly increasing the chance to trip the horse (a difference of +9 can easilly be overcome with good/bad luck)
