I cannot seem to find any rules regarding cannons and how much damage they deal. Is there anything official?

I'd say that a cannon does not make much of a traditional weapon. It's more a seige engine, like a catapult. Anyone close to you who saw you poiinting it at him personally would simply move faster that you could re-aim the cannon.

As a siege engine I'd give it stats of:

Cost: ??? (dunno, depends on the availability of guns in your world)
Damage: 6d8
Critical: x3
Range Increment: 500 feet
Typical Crew: 2

Edit: Oh, I'd probably also give it a reload time of three full round actions (same as a heavy catapult) but then only 2 full round actions to aim it (much faster than the heavy catapult).

Just use the stats for the catapults in the DMG and call it a day. While Pandaemoni gave the stats for heavy catapults, I'd wouldn't restrict them to just that, since there were different sizes of cannon.

Also, I believe Heroes Of Battle had more stats for siege weapons. Maybe they have cannons in there. At the very least, it's more stats to "borrow" for different types of cannon.

There are stats for cannons (though they might be called "bombards," I really can't remember) in Stormwrack.

Quite correct. There are light bombards and heavy bombards. Light bombards deal 3d10 damage and have a range increment of 150', but they can only be fired once every six rounds at most and the crew manning them has to make Profession(siege engineer) checks to prep it each time. Heavy bombards deal 6d10 and have a range increment of 200', but can be fired only every ten rounds at most.
Also, remember that cannons require gunpowder. The generic D&D setting (Greyhawk) does not have this substance. In Forgotten Realms, the ever-inventive gnomes have come up with an alchemical substance called smokepowder that's basically gunpowder...but it costs a lot more than modern gunpowder does, so firing bombards regularly gets kinda expensive.
