I heard there was a 3.5 chart out there to get the CR level of the monster for a party of 6. Currently, the average party level is at 6. But, if there is a chart out there, that would be much more helpful.

Try a Google search for an Encounter Calculator. I found one here, but I am sure there are others.

For example, six 4th level characters are equivalent to a 5.2th level party. So a CR 4 would be a weak encounter, while a CR5 or 6 would be a standard encounter. CR7+ would be a tough encounter.

d20srd.org has an encounter calculator that will work for you.

But in general to figure out the Encounter Level (EL), not Challenge Rating for party of 6 add +1 to the EL. You use CR to figure out EL. CR is how tough an individual monster is, EL determines how tough an encounter with a monster or group of monters is going to be for a group of 4 PC's of a given level. As the standard is 4 adding +1 to the EL will bring it in line for 6 PC's.

So a level 6 party with 6 PC's will be "challenged" by an EL 7 encounter (two CR 5's, four CR 3's, or one CR 7 creature).

Here's a link to my favorite ECL calculator (http://www.penpaperpixel.org/tools/d20encountercalculator.htm). It allows for creatures of various CRs in addition to taking the number of party members into account.

As a general rule of thumb, you're better off increasing the number of foes to bring up the EL for a larger group than using a single higher CR creature. If you use fewer creatures then the party can gang up on them and drop them very quickly. Or, on the opposite scale, you run the risk of the creatures being too tough (high AC, DR they can't bypass, immunities, etc) or hitting too hard (high attack bonus, high damage) for the party. What frequently results is a question of initiative, if the party members win then they drop the guy quickly, if the bad guy wins then a party member goes down.
