Has anyone noticed the crystal scorpion poison on page 24 of Sandstorm? The table says that the poison leaves the victim entangled for 1d4 days--but says nothing about what entangles the victim. Does anyone have any ideas?

I would say that they used the term entangle because it's a defined condition (see DMG condition summary p. 300) with set penalties.

If I had to translate to Roleplay terms, I'd say they had severely seized and cramped muscles for the duration.
