Deflection bonuses don't stack, right?

In reading in the DM only Dodge and unnamed bonuses are the type that stack with one another. Just want to be sure.

Also do you get your deflection bonus on touch attacks as well as flat footed?

Player's Handbook, p. 307.

Deflection bonuses do not stack with other deflection bonuses (but do with everything else).
They do apply against touch attacks (I believe it's because they are force effects)

They do apply against touch attacks, but it's not because they're necessarily force effects. They do, well, just 'cause they do. :)

The only things that don't apply to touch AC are natural armor, shield, and armor bonuses. Everything else does.
