If a foe provokes an attack of opportunity from me, can I instead of taking that attack, make a disarm attempt? A trip attempt? How about a sunder attempt?

Can I try to grapple him?

Yes and no. You can take an AoO with any weapon that currently threatens the target. So a disarm can be made with a weapon, but not unarmed unless you threaten with your unarmed attack. The same goes for Trip, you would have to threaten with your unarmed attack, or have a tripping weapon ready. You can usually only Sunder with a weapon, so most AoO's can Sunder as instead. Grappling on an AoO also needs you to threaten with your unarmed, weilding a mancatcher would probably allow you to do it though.

Improved Unarmed Strike, lets you threaten unarmed.

You can do any of those provided you threaten, as ibayboy said. If you don't threaten you can't take an AoO so...

If you try doing something like a Disarm or Trip, the opponent will have a chance to start taking an AoO back on you if you would normally provoke one for that action.

Keep in mind that without a special weapon, a trip is considered a variation of unarmed attack.

As such, unless you have a feat/area monk, you do not threaten with the unarmed attacks and can not trip with your arm simply because your sword lets you threaten them.

But if you have a Spiked chain or similar weapon that lets you trip with it, then you can use it to trip on an AoO.
