I know there is a list of monsters in the OGL, but is there a list of creatures considered part of WotC's "Product Identity"? In particular I'm looking for (magical) animal type creature like Displacer Beasts rather than super intelligent/aberrant type creatures like Mind Flayers or Beholders.

Check the SRD Information Legal.RTF document. It includes the copy of the OGL with PI declaration.

Even though it is not declared PI, if it is not declared OGC, it falls under the application of the standard copyright law.

A: The following monsters are considered "Product Itentity" by Wizards of the Coast and are therefore not part of the SRD:
