You may find several of the entries in the 'Other Races' section of Drizzt Do'Urden's Guide to the Underdark to be of some limited use.

Um, I think he's asking about animals, plants, and critterly-type thingies. Not sentient types like drowzits and derfies, and illthings.

To that end--

'Plant' life-
None, really, but fungi take their place in the Underdark niches. Assume that there are plenty of fungi anywhere there is moisture or a source of decay (like well-travelled corridors). By and large most of these can serve as fodder for animals like rothe, and even the PC's mules. Only a small portion are going to be poisonous, luminescent, or have other special properties. Non-sentient fungi will range in size from moss-like growths to towering fungal 'trees'. Note that there are all kinds of possiblities to create a truly alien atmosphere here: those odd round pods hanging from the caps of the giant mushroom trees might explode in clouds of choking spores when they fall, this particular secies of slimy, mold-like fungus might cause the area it grows on to be under a permanent Grease effect, etc... As DM, it's your job to think em up and let the players discover them. But if you do it on the fly, be sure to write it down!! (That's actually a rule for every aspect of on-the-fly DMing.)

Animals:
All of the same niches will be filled, but in the Underdark, you're going to have more mole and bat-like critters. Blind, pale, luminescent, most of them will have degraded their visual organs in favor of enhanced hearing and touch, and all will be stealthy in the extreme. Blindsense or tremorsense will replace Alertness. Same critters, bigger ears.

Mostly you're going to have burrowing type critters: badgers, moles, gophers, they'll all be there, just... different. A woodchuck that has to worry about being snared by a cave fisher is going to behave and look much differently from one that has to dodge foxes. Monsters will take most of the predatory roles, with bats being some of the few natural predators still competing at these depths. Rats, of course, will be abundant.

And then, of course, there's the bugs. Most of the time, there won't be that many around, but once they smell food, they'll be all over the place, like in Indiana Jones and the Temple of Doom. Eew.

-Drizzt Do'Urden's Guide to the Underdark, and Underdark still cover that.

There's also the Balhannoth from Monster Manual IV, which - in its monster entry - has a mention of its possible existence in the Realms. On page 17, it says that said creatures primarily exist in the Anauroch region of the Northdark, and was supposedly created by the Netherese as a method of some mages being able to kill off rivals.
