Are there guidelines anywhere for updated the v.3 edition of the FR:CS to 3.5? I don't have the Player's Guide, so I'm curious, especially as I'll be running 3.5 Savage Tide in it soon.

I don't think there are plans for it, no. Most of the conversions have already been covered in other sourcebooks (the Complete Series, Player's Guide to Faerun, Races of Faerun, etc.)

If you plan on running in an individual area, then I'd recommend you grab the book covering the region and just go with that.

good luck with savage tide by the way. i'm running it in the realms as well, starting early next year, and we're REAL excited by the prospect.

back on topic, everything merlin said was right...the player's guide has most of the updated info you're looking for, and as such, i seriously doubt they'll redo a new FRCS anytime soon. i'd still recommend finding one cheap if you can, though, because the majority of the information in there is still accurate. you'll want the descriptions of the cities, the background on the geography and timelines, and the whole bit that only the main book can provide.

also, be sure to keep up on the "savage tide conversion notes"
on paizo.com giving tips on converting STAP from greyhawk to the realms.

I already have the FR:CS, so was just checking if there were any conversion notes.
Cheers to you both. I'm trying to convert it partially myself, to customise the Realms a bit, for example, with the Drow, I'm using a combination of the ones in the CS, and the Monster Manual.
