You know the one with the stylized "Z", well I was going through my old Lords of Darkness tome and found a refrence to the symbol.

It says, "The original symbol of Zhentarim resembls a stylized spear head bearing a white circle a long scrawled "Z" in the Dethek alphabet."

Uhmm Dethek is dwarven is it not? And none of the letters really look like "Z"... I know that the regional language in the Moonsea is Damaran which is written with Dethek, but it still doesn't explain what symbol looks like "Z" in the Dethek alphabet.

I'm not sure the symbol is a "Z" as we understand it.
Is it not the Dethek letter which takes place of our "Z" in the alphabet ?
The Dethek "Z" in fact !

None of the letters look like "Z" on the symbol at least to me.

oups,
maybe I was not explicit enough in my explanations.
I wanted to say that it's not a Z (or similar) which is in the symbol of Zhents but the letter/symbol which takes place of the Z in the denthek alphabet, something like "t"

So as I was paging through Lords of Darkness today. I found an image with the a group of soldiers in the phalanx setup. I then realized I recognized the symbol their shield as the Dethek letter Z.

So it is in fact that letter and older images with the stylized Z were most likely translations for our Earth worlders sake.
