Is Amountar (spelling?) a vestige? It seems that the vestige Amon in ToM seems to fit his description perfectly, though it seems to be overlooked.

Amaunator was linked with the vestige Amon in Eytan Bernstein's Class Chronicles articles on the Binder.

If you didn't use the vestige Amon (and the adaptation fits well), I'd either have Amaunator be reincarnated as Lathander formally, or a rocky husk drifting around the Astral. Most dead gods are simply dead gods, and I'd restrict vestige status to those who died in seriously unconventional ways (like perhaps some of those obliterated by Orcus with the Last Word).

If you use binders in Faerun, it's a logical consequence that Amaunator is Amon - there are not that much dead sun gods between the planes - though Ra from the Mulhorandi pantheon is a suitable replacement, if you want to bring back Amaunator as a god.

An interessting alternative is resurrecting Amaunator by pact magic - binders remember and sometimes even worship him - maybe they develop a ritual or epic spell that some day frees Amaunator from his prison out of space.
