Is there any extensive information on Sune's Paladin order than the few sentences on pg 26 of the FR Campaign sourcebook and the substitution levels fromChampions of Valor?

yeah I checked that one out too. That just tells you how to become one. I"m more looking into what they do, how they operate. Very confusing when a Chaotic diety has a Lawful Paladin Order.

Then you won't find much else in published Realmslore.

This particular order is just one example of those paladin orders which, from previous editions of FR, have never received proper attention in published material.

They exist primarily as partial references through scattered sources.

I was just hoping then (since I'm a lazy bum. hehe), if someone else had created anything with them. I don't really have a lot of time on my hands, and thought I'd check if somebody else had done the dirty work for their campaign per se

Real pity too, I wouldn't mind seeing a detailed write up of them myself. Might just do one myself come to think of it. :)

There's a bit more in Champions of Valor, if you have it. IMO it would be something like the ideal of the gallant, chivalric knight. In their mission, they would probably venerate Sune as patron (matron?) of beauty by protecting important and holy sites and avenging those who desecrate/mar Faerun's beauty. Likewise, they aren't especially keen on undead, to put it mildly.

Aside from that, I guess they can have less restrictions on their personal life than paladins of Helm, but they are paladins nonetheless - not to mention living, breathing and feeling creatures. Mind you, right now I'm playing a PbP game over at giantitp.com and we have a paladin of freedom (UA) affiliated with the Ruby Roses. This can also be a solution, although it would imo be another order altogether.

If I can be so bold, I would recommend my gallant prestige class from Prestige in the Realms hosted on Eric Boyd's website as perfect for them. We actually had one in our campaign that worked out well and was fun.
