Looking for a few clarifications:
1. I buy a riding dog. Per the LGCS, does it start with 5 tricks or 3? If 5, can I train the dog to trip with 2 tricks and then train it with three more tricks?
2. I buy a Warhorse. It can't be trained for combat riding. True? Seems odd.
3. What does it take to make an animal "war-trained" so that it can wear barding without penalty? Are riding dogs war-trained? Are a Druid's animal companions?

I can only talk of my experience playing a druid. A lot of table variation occurs over exactly what constitutes war trained with animal companions. I just bought the bullet and had my animal companion get the armour proficiency feat it needed. Now I have no more problems. Although it does not guarantee it, most Gm's will accept it.

It comes with three. You can train it with an additional three. If it is an animal companion, it comes fully trained to a total of six tricks plus bonus tricks. Unique to LG, training it to trip takes two of the trick slots.
2. I buy a Warhorse. It can't be trained for combat riding. True? Seems odd.
There is no method, other than via campaign documentation, to train an animal for a purpose in LG. Note that the combat riding purpose section of Handle Animal says that a warhorse doesn't need to be further trained. What training it then has is questionable and subject to table variance. Some judges will treat it as trained for the purpose, some will treat it as trained only for its tricks. Some will treat it as war-trained, some won't.
3. What does it take to make an animal "war-trained" so that it can wear barding without penalty? Are riding dogs war-trained? Are a Druid's animal companions?
There is no method, other than via campaign documentation, to assure that an animal will be treated as war-trained in LG. That goes for warhorses (most likely to be treated as war-trained) as well as riding dogs (less likely 'cause it doesn't say "war dog"). Animal companions specifically are not war-trained, via circle ruling (see the Pale's site on circle rulings and camels).

i think if you read the monster manual profile of a large dog it says riding dogs come "war trained" or something like that

Riding Dog: "If trained for war, these animals can make trip attacks just as a wolf does." (MM p. 272)

For LG purposes, this says that if you can somehow obtain a dog that is trained for war (such as through an AR), then it can trip. It doesn't, for example, say that if the dog can trip that it means the animal is trained for war.

In LG you spend two trick slots to have a tripping dog.

The tricks spent for teaching a dog to trip is in the LGCS 596 (Mar 14 version), page 40.
