Am I allowed to play the Knight class from the PHBII, if I have the rules with me? Or do I have to wait for an update to know? Just a little confused on the standards.

I will just fallback to a fighter if the answer in no, thank you.

Not without campaign documentation, so essentially no.

Currently, it requires campaign documentation. PHBII is one of the books that has been identified as being reviewed for the 597 update (list of items and/or draft due any day?). My thoughts are that Knight and Duskblade have the best chance for being added.

Not yet :( but as said the PHB2 is being looked at for the next LGCS release.

My advice if you can hang back with the new character and see what happens in the new LGCS. The Draft copy should be coming out soon (Febuaray) and the Actual copy is released in time for the D&D Experince...

I'm guessing the draft will be up in about a week and a half.

Even if the draft goes up, it will still be a "draft" so you will need to wait till it is refined and officialy released. The draft is just to give the players a heads up on what is changing, and to allow us to supply feedback (ie: "complain"). :P
