There any actual aging spells out there? I keep hearing about 'so and so creature cannot be magically aged' etc but I don't actually recall any spells that do that.

There probably aren't any. Partly because of the "death of old age - ultimate death" thingie and also because elves would be overpowered and so on.

Thought so... then why do so many times I see in monster or PrC listings about how they 'no longer can be magically aged'? Except for a rare handful of creatures I can't even remember the names of, nothing really ages you.

Its like getting a benefit of having a permanent gender, you can't be messed with by pervert mages, yay!

One potential "aging" effect is to go to a demiplane where time passes much faster than on the Prime. Send someone there for an hour in real time (trap them, trick them, whatever) then bring them back many years older. Perhaps the creatures that cannot be magically aged would not suffer such a fate.

Hmm, even though the method(planeshift etc.) is magical the effect isn't. I'd say it is probably a holdover from previous editions(haste aged you and so on) so that if they had actually made aging spells for 3.Xe then they wouldn't have had to change the core text.

Also there are a couple of Chronomancy spells in some 3rd party books so it helps with those.(having your limb age without the rest of you? yucky I say)

There were also creatures that caused you to age, Ghosts were one. Just glanced at the MM and didn't see any reference to aging in 3.x
