OK ... so imagine a 20th level sorceror wants to walk into a bar and win an arm wrestling contest ... Rules of the contest is that you have to be human to participate ...

Can he Polymorph into a stone giant ... then alter self back into normal form?

The way I am reading it ...
When he polymorphs into the stone giant ... he gains the stone giant's str, con, dex, nat armor, etc ...
When he alter self's into human ... he replaces the stone giant's nat armor with the nat armor of a human (0) ... but keeps his (stone giant's) str, con, dex ...

Is this a correct understanding of the way these two spells interact ...

Strange question.

Don't you gain the 'Giant' type when polymorphing into a giant?

The whole build-up about the arm wrestling contest was just an example of why he would need to appear to be human ... real question is -- when these two spells are cast in this order ... does the character become human sized/shaped -- with the attributes of the stone giant?

Very interesting question! The answer is yes! That would be a suitable way to rig a bar fight.
EDIT: Oops! I seem to have been proven wrong!

When you polymorph into a giant you gain the giant type. Alter Self, if cast afterward, can only turn you into other giants.

Speaking from a flavor and spirit of the rules sense, polymorph effects shouldnt' stack. All your benefits are inherently coming from the fact that you've changed form, so if you end up changing form back, you should lose any benefits of being polymorphed into a giant, since you are no longer a giant, but rather a human.

If you want a letter of the law help-me-win-D&D ruling, don't bother. If you're going to abuse polymorph, do it right (http://boards1.wizards.com/showthread.php?t=491801)
