Yes, it is from the first line of the spell in the SRD: This spell turns the bones or bodies of dead creatures into undead skeletons or zombies that follow your spoken commands. So the only undead you can create with animate dead are skeletons or zombies and the size is determined by the corpses size, and is limited by the max number of HD you can create according to your level.
