One gives a 50% cover miss chance, one gives a 50% miss chance because you're on a different plane half the time, but 20% cover miss chance if the attacker can also hit that plane. It would seem like it would be a 75% miss chance with a 60% if they can hit ethereal? Also how would a maximized planeshift work, would it always transport the user exactly 500 miles from where they wanted to be, or 5? A minimize feat wouldn't seem like a worthwhile feat to make.
