1. does Blink act as 'freedom of movement'? i.e., can someone who is Blinking be grappled?

2. are there any magical defenses against Evard's, aside from blinking?

1. They can be grappled, but they can just move out of the grapple on their turn without making any checks. For being grappled by another creature, there would be (normally) a 50% miss chance on the touch attack to initiate the grapple. With the tentacles, concealment won't help, so there would be a 20% chance that the tentacles fail to grapple a blinking character.

2. Freedom of Movement (of course). Grease will give a +10 to Escape Artist checks or grapple checks to escape or resist a grapple. (But it has S and M componenets, so its impossible to cast while grappled except if Stilled and Eschew Materials are used). The teleport series of spells (Dimension Door, Teleport, Greater Teleport) can be used to get out of the tentacle area; all of these have only a verbal componenet, so no problems there. The tentacles can be dispelled as well, although dispel magic has a somatic componenet, so can't be used in a grapple unless Stilled. Antimagic Field would, I believe, cause the tentacles to "wink out" of existence while in the Field, but would reappear if the Field were moved. Any spell that grants incorporealness or etherealness would also protect against the effects of the Tentacles too (except if they are Transdimensional, which would be an especially nasty use of the Transdimensional spell feat).
