I cannot remember the ruling on this. For example, a grease spell that lasts 9 rounds.. could the wizard choose to make it disappear after 3?

A wizard (or any caster for that matter) can only dismiss spells that have "(D)" in the duration line. Otherwise, it lasts until the duration runs out. Note also that a wizard automatically succeeds on dispel checks against his own spells, so a single dispel magic can get rid of any spell you've cast.

Great! Thanks so much, didn't know about the "D" descriptor.

Note that dismissing your own spell is a standard action, as casting Dispel Magic is.
